The pigment of shellac can be divided into two sorts: red dye that is water-soluble and is called lac dye; and the one that is insoluble in water and is called purple dye.

According to GB2760 food safety directives, lac dye can be applied as a additive in fruit or vegetable juices, syrup, yogurt drink, tomato products, jams, soft drinks, chewing gum, candy, ham, sausage, fish cake, baked food coloring and red coloring agent.
Additionally, it is applicable in coloring of non-protein, non-starch containing beverages, Sweets and fruit jelly, also as a color dye in medicine replacing carmine, and in Other aspects of dyeing.
